“Almost” Paleo Brownies

Almost Paleo Brownie

It’s no secret I love chocolate and brownies are my biggest weakness. Steering towards more of a Paleo diet we have cut majority of refined sugars, grains and dairy out of our eating since the New Year and I have been in big time withdrawals for dessert. So I went on the hunt for alternatives and low glycemic index recipes and came up with this brownie mix. Many people use different nut based flours or milks but I’ve stuck to coconut for this one. It’s not quite Paleo because I added semi-sweet chocolate chunks to the mix. I have to say for a chocoholic, I was pleasantly surprised with my dessert. It was moist and was great after dinner treat when served with some coconut milk.  It also registered a lot lower on my guilt meter and I didn’t bottom out with a sugar kill. This one will be making a reappearance in my future.

Paleo Brownies (Almost)

  • 1 egg
  • 1 cup almond flour
  • 1/2 cup coconut oil (solid)
  • 1/2 cup cocoa powder
  • 1/2 tsp ground cinnamon
  • 1/2 cup coconut milk
  • 1/2 cup semi-sweet chocolate chunks
  • 2 tbsp coconut palm sugar (some recipes use honey)

Pre-heat oven to 325 degrees Fahrenheit

Mix ingredients together and pour into a 9 inch greased pan.

Bake for 35-40 min and let cool before serving- Enjoy!
