Backwoods Pineapple Cake

Food is one of the few comforts that you can find when in the backwoods with little to no modern conveniences, especially when you have the ability to pack limited ingredients and supplies. That’s why this pineapple yum yum cake (I know it needs a better name, hence the title) was such an amazing treat when living out of a backpack for 20 days. So much so, that I thought maybe if I made it again, it wouldn’t be as delicious as we had remembered. However, I was wrong, it’s just as easy to make and tasted just as good with a coffee after a gourmet meal. The recipe is from the camp cook but I think if you google yum yum cakes, there are many versions of it to try.

Pineapple Yum Yum Cake

  • 2 cups flour
  • 2 eggs
  • 1 can crushed pineapple (juice included)
  • 2 cups sugar (brown or white)
  • 2 tsp soda

Mix together and bake at 350 F for 30 min

Topping:

  • 1 cup sugar
  • 1 can evaporated milk
  • 1/4 cup butter or margarine

Boil for 2 minutes, take off heat and add:

  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 tsp vanilla

Pour over cake while hot, let the cake cool for 3-4 hours before serving.

I guess hey! Why ruin a good thing! It was actually G2 that hated the name, just like he loves the Hello Dolly squares but hates the name!
