Espresso Brownies

I have an addiction to coffee. The thought of the smell of it percolating into my bedroom on its scheduled brew every morning makes me smile thinking about it the night before. G2 mentioned a month ago that maybe we should cut caffeine out of our lives including coffee. My reaction garnered a facial expression from him that I can only compare to how Travis looked when he peered through the slates of the crate to discover that Old Yeller was indeed rabid and in turn had to be shot.

So now he is off caffeine and I am have turned more “Pro” coffee than ever before, in fact I am sneaking it into the baked goods potentially to prove, it’s here to stay like it, or not. I made the recipe for these Espresso Brownies, G2 loved them and even had some Cappuccino ice cream to go with it. I thought I should share my addiction/love with all of you as well.

Espresso Brownies

  • 1/2 cup Salt Butter
  • 1 cup sugar
  • 2 squares unsweetened baking chocolate
  • 2 tsp Instant Espresso Powder (divided)
  • 3 tbsp hot water, divided
  • 2 eggs
  • 1 1/2 tsp Pure Vanilla Extract
  • 1/2 cup All purpose flour
  • Pinch of Salt
  • 1/2 cup icing sugar
  • 1 tbsp cocoa powder
  1. Pre-heat oven to 325 F- On the stove set a metal bowl over a pot of simmering water (or use a double boiler), add 1/2 cup butter and the sugar and chocolate. Stir a few times as butter and chocolate melt.
  2. Dissolve 1 1/2 tsp instant espresso powder in 2 tbsp hot water. Add to butter and chocolate, mixing until smooth. Remove mixture from heat and cool until barely warm before whisking eggs and 1 tsp vanilla.
  3. In another bowl, mix flour and salt. Whisk into chocolate mixture until smooth. Spread in a greased 8×8-in pan. Bake in oven 25 min or until the top is set.
  4. To make icing, combine remaining butter, icing sugar and cocoa powder in a small bowl. Mix in remaining instant espresso powder and vanilla and 1 tbsp hot water, stirring until smooth. Ice brownies in pan while still hot.
  5. Enjoy maybe with a latte?!

These are amazing – however you need to add another 1/2 cup of butter to make the frosting and DO NOT frost while hot. It just makes a glaze. I should have trusted my gut on that, but they were still good!
