Quinoa Stuffed Peppers

My health and particularly diet has really been a priority for me this year. So I’ve started to incorporate more vegetarian dishes as well as trying out Meatless Mondays as a mini detox to start each week. While there are many elaborate dishes out there to try, I’ve found that even this simple quinoa stuffed pepper recipe is both healthy and filling ans makes for easy clean-up on a weeknight. Plus the recipe can be adjusted to fill the pepper with just about anything. For alternatives try it with rice or beans, or make it a carnivore option with meat!

Quinoa Stuffed Peppers

(Serves 4)

  • 4 red, yellow or orange bell peppers
  • 1 cup Quinoa
  • 1 cup chopped mushrooms
  • 1 cup  chopped asparagus
  • 1 clove garlic, minced
  • 1/4 cup green onion diced
  • 1/3 cup feta cheese, crumbled
  • Salt and Pepper to taste
  • Cream of Balsamic
  • 1 Tbsp avocado oil
  1. Wash and hollow out peppers, cut in half if you prefer smaller servings
  2. Cook quinoa as per instructions
  3. Saute garlic, mushrooms and asparagus until soft.
  4. Add veggies to quinoa, stir in 1/2 the feta and some cream of balsamic (to taste)
  5. Fill bell peppers with quinoa mix and sprinkle on green onion and the remainder of feta cheese
  6. Put on the BBQ in foil if you wish, cook on medium temp for 15 minutes
  7. Drizzle with cream of balsamic and serve
