Muddle mint leaves and lime juice in the bottom of a cocktail shaker. Add a handful of ice, Equinox spirit and shake.
Add new ice to a glass or copper mug, strain liquid from strainer into mug and top with ginger beer. Garnish with lime wedge, mint or other fresh fruit such as blueberries or strawberries.
