For the past two years I’ve made truffles and handed them out for some christmas and thank you gifts. Although I love making them, my time these holidays is just too tight to dedicate to these fussy little delights. So this year I searched the web and came up with my version of a dark chocolate, caramel and sea salt bark. This homemade chocolate is far easier/less time consuming to make and I think the result is just as nice. Plus I’m advising people to enjoy it with some red wine or port, so if it’s not that great, heck there’s always the wine!
So here’s my totally inaccurate recipe (I have an issue with measuring portions apparently!):
Chocolate, Dulce de Leche & Sea Salt Bark
- 300 grams dark chocolate (over 70% cocoa)
- 1 can dulce de leche or 1 can sweetened condensed milk (recipe to make it here)
- 1 tbsp sea salt
Slowly melt chocolate in a double boiler (you can improvise like I do by placing a glass or metal bowl over a pot with boiling water)
Once chocolate is melted through add 1/4 of dulce de leche and stir in. Pour melted chocolate mixture on a parchment paper lined cookie sheet. Add remainder of dulce de leche while warm to chocolate, then sprinkle on sea salt. Place in the fridge for 1 hour. Chocolate bark can then be cut or broken into sizes you desire.
For my chocolate bark I found some great Martha Stewart candy bags with some holiday boxes to package them up in, complete with a sweet little tag that I just put To: Your House, From: Ours. I like the personal touch when giving out chocolates. Now I just need to figure out who I’m sending it out to!
