Parmesan Cups

Quick and simple for entertaining, it’s easy to whip some of these parmesan cups and serve with dips or use as a decorative yet edible salad bowl or to even serve a side of risotto. I recently made some for a dinner party and served a smoked salmon salad in them- even to my chagrin everyone wanted to eat the cups with the salad and afterwards. If this is too much work you can reduce the size and thickness of cheese to make a decorative crisp to serve with the meal.

Here’s how to make them:

From 4 cups of fresh grated Leoni-Grana or Parmesan cheese you can make 6 cups/portions

  • Use portion to cover the bottom of a 6-inch non-stick saute pan.
  • On medium heat let Parmesan melt and start to brown slightly (this takes 2-5 min)
  • Turn and brown other side
  • Flip cheese patty out onto an upturned old-fashioned glass or other similar shaped bowl- below you can see I moulded mine inside the glass bowl, but either way works.
  • Form cheese lightly around the glass and let it cool and harden.
  • Rinse and Repeat- have fun serving with them, your guests will think you went to a lot of extra effort!
