Super Pumpkin

Pumpkins are considered a superfood, the flesh and seeds can improve kidney, prostrate and bladder function, protect against cancer, lower cholesterol and help with depression. The seeds are dense in minerals such as zinc as well as the amino acid tryptophan. My granola mix usually calls for (pepita) pumpkin seeds so Halloween is a perfect time to stock up on baked seeds. However after doing some research I decided to mix it up with some flavoured seed recipes. My favourite three are listed below, all you need is 2-3 cups of fresh pumpkin seeds to mix with the rest of the ingredients and bake on 375 F for 10-12 min until golden. Enjoy in a salad, granola or by themselves as a snack!

Lime Chile Pumpkin Seeds 
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp coarse salt
  • 2 tbsp fresh lime juice
  • 1 cup fresh pumpkin seeds
Black Tea & Butter Pumpkin Seeds 
  • 1 tsp black tea
  • 3 tbsp unsalted melted butter
  • 1/2 tsp fine-grained sea salt
  • 1 cup fresh seeds
Caramelized Pumpkin Seeds
  • 1/2 cup butterscotch caramel sauce
  • 1 cup brown sugar
  • 1 tsp cinnamon extract
  • 1/2 tsp cayenne pepper
  • 3 cups fresh pumpkin seeds

I am going to make some and use in salad with blue cheese or even a trail mix becasue then they have a bit of sweetness to them.
