Beets hands down might be one of my favourite fall harvests from the garden. They are such a versatile veggie, you can cook, roast, bake… the list goes on of the recipe options and ways to try them. I hazard to guess that people who say they don’t like beets, probably just haven’t had them cooked properly before. Although high in sugars they pack a whole bunch of health benefits such as lowering blood pressure, fighting inflammation, assisting with detoxification and anti-cancer properties when eaten.
So I rounded up some of the more unique ways to give beets a try other than typical roasting or boiling for a side at dinner. Keep in mind beets take a while to cook when done properly, so be patient and enjoy!
