Black Bean Pasta

Today I wanted to share not so much a recipe with you as an obsession I have had with this Black Bean pasta since finding it a few weeks back at Costco. As I mentioned at the beginning of the month, I was going to stick to meatless Monday’s. Well I’ve been hooked on trying this with a number of things. It’s gluten free and made from black beans, I’m also impressed with the nutritional value also. It has 25 grams of protein, 12 grams of fibre and 26% of your recommended iron intake. Not to shabby especially if you are skipping the meat that day.

I’ve tried it with a number of different sauces, but love this basil pesto and roasted vegetable combo, which is a quick and tasty dish that can be thrown together in less than 20 minutes after a busy weekday. And if meatless also implies a wine free Monday? I have failed on that front. I found this dish pairs quite nicely with a Malbec. Let me know if you’ve also tried the Black Bean pasta. I have seen the pasta at Costco and I am going to pick up some the next time I see it. Oh and BTW, wine (especially Malbec) is never a fail! haha!
