Fish & Chips is one of those heavy meals that I always avoid ordering when out or making at home. I generally have a policy that the only thing I’ll deep fry is ice cream (which reminds me, I should share that recipe)… But since we’ve been trying to incorporate more fish into our weekly diet, I decided to try Halibut on the BBQ this way and then proclaimed it Fish & Chips done healthy, ok it’s healthier than batter and French fries, but I’m not giving up the aioli 🙂
The Fish– BBQ’d halibut rubbed with garlic, dill and olive oil and sprinkled with lemon. The Chips– Baked Asparagus with Roasted Garlic Aioli {this awesome recipe can be found on Just a Taste}. Then to add some smokey sweetness to compliment the light halibut steaks, I sautéed peaches with a splash of Maple Syrup and Cointreau for about 10 min. Snapped a quick iPhone pic before serving and voila! Fish & Chips…. sort of.
