For all the fly fishing we like to do, adding our catches to our diet is not something we typically do {I’m all for catch and release}. I generally stay away from fish dishes as I didn’t know how to prepare or cook them properly. Fish is a great source of low-fat protein and minerals as well as omega-3 fatty acids and halibut is so forgiving for a fish cooking amateur and can be prepared and cooked a number of ways.
For this easy dish, I simply prepped the halibut by rubbing with olive oil, course salt and pepper and baked for approx. 12-15min or until the halibut is opaque. As the fish was baking I modified this Pineapple and Avocado Salsa recipe, I substituted the jalapeno for red pepper, the cilantro for mint and a splash of hot sauce. Top your halibut with salsa and serve with a side salad or arugula as per the recipe and voilà an easy, healthy dinner in less than 20 min, which is always a plus during a busy week.
