Spring and my bikini vacations are fast approaching. I dread the thought of eating dust or doing a maple syrup and lemon water cleanse for a month. I love food too much to let that happen. I came across some dishes that are hearty and filling but ultra healthy. I decided to try a Shrimp and Shiitake Risotto, the recipe indicated that it was about 451 calories/large serving which is equivalent to about one large Jugo Juice.
The one recommendation I would make with this dish is to use large cooked prawns that are de-tailed and for a more filling option you can sub out the shiitake with the meatier portobello mushrooms. Enjoy!
