Since I’ve been leisurely going about my days, I thought I had time to experiment with a breakfast muffin recipe. I wanted something that was wholesome but still tasted good with a morning coffee. My recipe packs in dried berries, sunflower seeds and hemp hearts. It turned out to be a very dense and hearty muffin and so I’ve dubbed it the Mountain Man.
Mountain Man Muffin
Makes 12 Muffins
- 1 cup oatmeal
- 1 cup applesauce
- 1 egg
- 2 tbsp vegetable oil
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 cup water
- 3/4 cup whole wheat flour
- 1/3 sugar
- 1/2 cup dried cranberries or blueberries
- 1/4 cup yogurt chips
- 1/3 cup sunflower seeds
- 1/4 cup hemp hearts
- Mix oatmeal, flour, sugar and baking powder together
- Beat egg, add applesauce, oil and water, add to dry mixture
- Add berries, yogurt chips and seeds to mix and blend thoroughly
- Fill muffin tin, each cup 2/3 full and bake at 400 F for 16-18 min
