Want a healthy salad that quick to make after work? I spied a photo of this recipe while waiting at the grocery checkout. This salad is super tasty and dead simple. So simple I don’t even need to use bullet points in the post to describe what to use and how to make it. Cook enough quinoa to the number you are serving and let cool. While cooling chop up some cherry tomatoes and steam or microwave asparagus until it just starts to turn tender, chop and add to the mix. For the dressing add 2-3 tbsp of Olive Oil and 2 tsp of Balsamic Vinegar. Toss in a handful of feta or goat cheese (you can also add Basil as the “proper” version suggests) and you are ready to enjoy as a great side with dinner or on it’s own!
