Friday nights are typically when I’m least motivated to cook. It’s the end of the week, and with summer coming, I’d rather be spending my time outside grabbing some fresh air than in the kitchen. I love a good sheet pan dinner because they are usually minimal prep, cooking and clean-up and it’s an all in one meal. One of my favourites that I keep coming back and making when I’m short on time or just don’t feel like making a big effort is this Steak Sheet Pan Dinner. It’s so tasty, has a nicely rounded mix of veggies, protein and carbs and literally only takes 20 minutes in the oven. Clean-up is also a breeze when you throw everything on foil when you’re cooking.
And if you make enough, it’s usually great for leftovers the next day. I usually find this recipe is good enough for two people plus some leftovers, which is usually just the right amount for me! Cook time is around 20 minutes but if you want your steak more rare- I would throw that on after the veggies have been cooking for at least 5-8 minutes.
Overall the recipe is healthy and great when you’re on the go any day of the week and only have a little bit of time to spend in the kitchen.

Steak Sheet Pan Dinner
An easy sheet pan dinner that is less than 10 minutes to prepare and only another 20 minutes in the oven. Perfect for when you're on the go this summer!
Instructions
Slice Steaks into strips and add 2 Tbsp of Olive Oil to coat, add salt, pepper and other seasonings as desired. Let sit for 10 minutes or until ready to cook.
Add sweet potato, brocollini, beans and garlic together, mix in oil and add any spices or balsamic to flavour. Spread out on foil cooking sheet.
Pre-heat oven to 350 degrees. Bake sheet until veggies and meat are at a desired tenderness. As mentioned, if you would prefer more medium rare to medium steak- add steak in for around 15 minutes.
