With patio season on our doorstep, I’ve been craving one of my favorite summer cocktails, a chili coconut margarita from Anejo here in Calgary. This weekend, I was still looking for a “spicy” cocktail so I decided to work with what I had in the fridge. Since I love watermelon, I figured some sort of lemonade with an infused kick from a jalapeno pepper would make a refreshing option. The biggest rule with this drink, the spicier you want it, the longer you let the pepper infuse. I found 45 minutes was about the right amount~ just make sure to take it out before you serve! Also, serve over ice or not and adding a splash of vodka is also optional.

- 4 cups seedless watermelon (cubed)
- 2-3 limes juiced
- 1 jalapeno Chile seeded and sliced
- 2 tbsp sugar

Instructions
- Juice or Blend Watermelon.
- Add Juice of Limes. I found I added one lime at a time. If you want the drink more tart, go ahead and add 2 to start and a 3rd if it isn't enough.
- Add Jalapeno to the Watermelon Limeade, set in the fridge and let the pepper infuse into the juice (the longer the spicier), I leave mine for 45 minutes.
- Use a slotted spoon to remove all the jalapeno peppers.
- Stir and serve with a sugared lime. Add additional sugar to taste.
