On of my favourite, super easy to make dishes that still packs a ton of flavour is a Sun-dried Tomato and Goat Cheese Stuffed Chicken. The prep time is literally 10 min, (unless blanching the tomatoes takes a bit longer) and people always think I’m making something fancy~which couldn’t be farther from the truth.
If you have any people in the household who dislike goat cheese, switch to feta and I’ve also used Sun-dried Tomato pesto or even Red Peppers as a substitute to this recipe. Also don’t be afraid to BBQ the chicken, it gives it even better flavour. The dish is great served with wild rice or orzo as the recipe suggests and maybe add a glass of Pinot Blanc in for good measure!

I’d recommend BBQ vs baking, but that’s just my preference!
