Cabin Frittatas

Winter time brings another round of outdoor fun from skiing, skating, snowshoeing or snowmobiling. With all these high energy activities you need a decent kickstart to the day. After a week of Christmas vacations and heavy meals we set out to the cabin for a quieter weekend of fun in the snow. One morning instead of the regular bacon, egg and pancake routine that G2 loves to make as his specialty we tried some individual frittatas. It’s a lighter, easier option if you don’t have enough people to mix up a dozen eggs into a pan. Using a muffin tin and a large water glass, I cut 12 grain bread into rounds to line the bottom of the tin, then  added chopped up bacon with a hint of maple syrup. Add in an egg, cheese and herb mixture on top and bake in the oven for 20-25 minutes and you have perfect serving sized breakfast that is healthy and fills you up to start a day of snow filled activities.

Cabin Frittatas

You will need:

  • A non-stick muffin tin
  • 12 grain bread
  • Eggs
  • Diced bacon or ham
  • Skim Milk
  • Cheese (I used parmesan, but you can use a sharp or aged cheddar)
  • Green Onion or Sage if you wish
  1. Cut as many rounds out of the 12 grain bread using a water glass as you would like to make.
  2. Line the bottom of the muffin tins with bread and press into the sides to ensure you have a solid base
  3. Add ham or bacon on top of the bread, fill muffin tin approx 1/3-1/2 full
  4. Mix eggs, 2 tbsp of milk and herbs together and gently whisk (You will need about 1 egg/ muffin frittata)
  5. Sprinkle grated cheese on top and add salt and pepper.
  6. Bake in the oven at 350 for 20-25 min.

Make as many or as few as you would like, I make at least 2 per person.

They are easy to make! You could even add in some cold cuts or pre-cooked ham if you don’t have time for bacon
