Raw Energy Balls

If you are a coconut fan like me you will love this recipe for Coconut-Lime Energy Balls. This week I’m working out of a helicopter, which means cramped working conditions and limited stops for lunch. With a hypoglycemic like myself, you don’t want to see how ugly it can get if I don’t have a snack in my bag. My friend Dale, passed on this great recipe and I love that they look like dessert but in fact are quite healthy. Plus no baking required and you can stash them in the fridge for a couple of weeks. Ok I admit I may be eating one as I write this, but the flavour is amazing.  I think these compact little marvels will be stashed neatly under my seat tomorrow!

Coconut- Lime Raw Energy Balls

  • 2 cups- Ground Cashews
  • 2 cups- Unsweetened Coconut
  • 1/4 tsp Sea Salt
  • 2- Limes (Zested  & Juiced)
  • 1/2 cup Honey
  • 1/2 cup Coconut to roll the balls to finish
  1. Process Cashews to a fine meal ( I used my coffee grinder, which worked better than you would think)
  2. In a large bowl combine Cashew Meal, Coconut, Lime Zest & Sea Salt- Stir
  3. Add Lime Juice & Honey- Stir to combine
  4. Add juice to dry mix and stir, form bite-size balls with your hands
  5. Roll Balls in Extra Coconut
  6. Store in an airtight container in the fridge.
