Eau Claire distillery says it best when they describe their Spring Equinox White Spirit as a “post-hibernation celebration”. Eau Claire Distillery is one of the stops on my upcoming “Localist” tours, and have become a neighborhood favorite to get “farm to glass” spirits.
I couldn’t wait to get my hands on a bottle of the Spring Equinox. Technically a “white spirit” and not a vodka. It has floral notes and smells like spring in a bottle. I just had to try it out in a Moscow Mule Recipe. If you aren’t lucky enough to find some Spring Equinox, just use regular vodka for a refreshing Mule!
I must get some Copper Mugs as well, I think this will be a patio favorite this summer.

Ingredients
- 1 can Ginger Beer
- 2 oz Spring Equinox White Spirit
- 0.8 oz Lime Juice
- 4 mint leaves

Instructions
- Muddle mint leaves and lime juice in the bottom of a cocktail shaker. Add a handful of ice, Equinox spirit and shake.
- Add new ice to a glass or copper mug, strain liquid from strainer into mug and top with ginger beer. Garnish with lime wedge, mint or other fresh fruit such as blueberries or strawberries.

Sounds pretty yummy! Will have to get to Turner Valley for some Spring Equinox and maybe a tour.
