With Stampede over, I’m feeling the haze of the overindulgent week of food and drink and want to get back on track with healthy eating and exercise. I always have a love affair in the summer with grilled fruits and ripe peaches are no exception. To add some summertime zest to this grilled chicken salad, I added peaches and grilled green onions sprinkled with coconut ribbons, cranberries and pumpkin seeds. Dressing was kept to a minimum and only added to the greens mix before plating the remainder. I used a lemon poppy seed dressing, however if you prefer a simple oil-vinegar mix, you can add a splash of orange juice, honey and seeded mustard instead.

Grilled Peach Salad
A light summer salad with fresh grilled peaches, make as a side or a main dish!
Instructions
Marinate and grill chicken as you wish, when finished add halved peaches and green onion to the grill for a few minutes.
Mix shredded kale, radicchio and brussel sprouts in a bowl. Toss in salad dressing of choice, or you can use 1:1 olive oil to red wine vinegar, 1 tbsp orange juice, 1 tsp seeded mustard and 1 tsp honey, mix and add to the salad.
Plate salad base, scatter slices of peaches chicken and green onion on top. Sprinkle cranberries, nuts and or coconut flakes.
